Make Your Own Tostadas, Amigos!

This week, ArtEase! presents to you one of the SIMPLEST, tastiest, most customizable dishes your home school could ever create! TOSTADAS! Why head to a Mexican restaurant for your “toasted tortilla,” or tacos, nachos, enchiladas, fajitas, burritos, or enchiladas when you can build your own crunchy corn shell and top it with all the creamy guacamole, smokey chipotle, yummy sauté-grilled veggies, scrumptious grilled chicken or beef, melted cheeses, fresh crisp lettuce, and red-ripened juicy diced tomatoes that your heart desires, AT HOME!? Is your mouth watering yet? Let’s make this flavorous multi-colored dish… TOGETHER! OLÉ!!!
On August 18th, we celebrated "National Fajita Day" for our daily Dilly Days (see here). Then we thought, why wait until the next Mexican holiday Dilly Day celebration to roll around to share our specialty tostadas recipe when could just share it now! So, here you are, from ArtEase! to you, TODAY! :)

“Tostada” is a Spanish word for “toasted.” Not only is this savory, toasty, crunchy dish tasty and colorful and easy to make, but it can also be a healthy meal choice, depending on how you choose to top your shell. We’ve chosen to share our “healthy version” of the grilled chicken tostado this time. Indulge, and enjoy!

INGREDIENTS
(yields 2-3 tostadas)
​(customize to your liking & quantity)
2-3 Corn Tostada Shells (warm)

1 cup grilled chicken (frozen or almost thawed)
(hold the chicken for vegetarian version - pictured)

1 cup sliced green bell pepper
1 cup sliced red bell pepper
1 cup orange and/or yellow bell pepper

1 cup sliced red onion
1 cup sliced yellow onion
1 cup diced red tomatoes
1 cup shredded lettuce
1/2 shredded fiesta cheese blend
2 tablespoons extra virgin olive oil
2 tablespoons sour cream
Salt and Pepper to taste
*NOTE: All ingredients are customizable to your liking!

DIRECTIONS
  1. In medium (to large) skillet, warm the olive oil to medium heat
  2. Add in grilled chicken, green bell peppers, red bell peppers, red onions, yellow onions
  3. Sprinkle salt and pepper on meat and veggies as they sizzle, and stir around
  4. Sauté on medium to high heat until veggie edges are golden brown-ish, or veggies are tender (no longer crunchy), stirring regularly
  5. Let veggies remain in skillet on low heat and sprinkle with a little shredded cheese
  6. While meat and veggies simmer, place single layer tostadas on microwaveable plate and warm for about 30 seconds
  7. Sprinkle a little shredded cheese onto tostada
  8. Top each tostada with 2-3 tablespoons of the sautéd blend of meat and veggies
  9. Top that with shredded cheese, dice tomatoes, shredded lettuce, and sour cream
  10. INDULGE!!!
THAT’S IT!!! We like to add a cup of packaged (or homemade, sometimes) salsa on the side, as well as a side dish of the delicious “Rice-A-Roni Cilantro Lime Rice” mix. Feel free to add in as much cheese as you like, more sour cream if you choose, and guacamole if you prefer, or even refried beans if you fancy. Whatever you do, simply INDULGE and enjoy!
