"MinneappleUps" (Cinnamon Apple Cups)

What do you get when you mix cinnamon rolls, cinnamon apples, brown sugar, a tablespoon of water, a muffin pan, non-stick spray, and an oven at about 350 degrees? You get what we call “MinneappleUps,” or mini cinnamon apple cups! Talk about SCRUMPTIOUS!!! Here’s how we make them.
MinneappleUps - Brown Sugar & Cinnamon
INGREDIENTS
2 Cans Pillsbury Cinnamon Rolls
4 Apples (we use 2 Honeycrisp, 1 Jazz, 1 Granny Smith)
1/2 Cup Light Brown Sugar
1/4 Cup Water
​1/2 Teaspoon Cinnamon Powder

Muffin Pan (16 count)

DIRECTIONS
  1. Wash and peel four apples
  2. Slice and dice apples into small chunks
  3. Keep apples submerged in cold water until ready for next steps (prevents them from browning)
  4. In large skillet, add brown sugar and water
  5. On medium high heat, mix and dissolve brown sugar with water (about 2 to 3 minutes)
  6. When sugar is completely dissolved, add in diced apples and sauté
  7. Cook apples until medium soft in texture
  8. Drain apples and set aside
  9. Pre-heat oven to required temperature according to your oven (seen Cinnamon Roll can)
  10. Spray non-stick cooking spray in bottoms of 16 muffin cups/pan
  11. Pop open both Pillsbury Cinnamon Roll cans and put one cinnamon roll in each cup
  12. Mash out each cinnamon roll in its cup, spreading over bottom and sides of each, shaping into a "cup"
  13. Fill each cinnamon roll cup with spoonful of sautéed apples
  14. After each cinnamon roll cup has been filled with apples, bake as directed on cinnamon roll can
  15. Be sure the “dough” in the centers of each roll are cooked enough (not doughy)
  16. Scoop cream (came in cinnamon roll cans) from metal-lid container into microwave safe bowl
  17. Melt the cream for about 15 seconds or until soft and pourable
  18. After cinnamon rolls have cooked and cooled, remove from muffin pans onto a plate or serving dish
  19. Pour desired amount of melted cream over each cinnamon roll
  20. ENJOY!!!
This makes for a great "activity" to do with the kids, friends, or family. We created a couple of batches a few weeks ago when family came over and had a craving for apples and dessert. Memories made!
